Grandma's Chewy Sugar Cookies
These sugar cookies are a little less sweet than your average sugar cookie as there is less sugar involved in the making of them.
Ingredients
- 1 cup butter, softened 2 sticks
- 1 1/4 cups granulated sugar
- 1 large egg
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/4 teaspoon vanilla extract
- 1/4 cup granulated sugar for rolling cookies
Directions
- Preheat oven to 350ยบ F. Grease pan with light spray of olive oil.
- Cream together butter and granulated sugar, make sure to whisk the butter and sugar together until it is light and fluffy, the trick is to get it airy.
- Mix in the egg
- Stir in flour, baking powder, salt, and vanilla.
- Scoop cookie dough by the tablespoon full and roll into a ball.
- Add the extra sugar to a bowl or plate.
- Place each ball of cookie dough into the bowl of granulated sugar and roll to coat well.
- Place cookie dough onto baking sheet, spacing about 1 1/2-inches to 2 inches apart. Lightly press each cookie down.
- Bake for 10 to 12 minutes or until lightly browned on the bottom.
Makes approx. 30 cookies
