Grandma's Chewy Sugar Cookies


These sugar cookies are a little less sweet than your average sugar cookie as there is less sugar involved in the making of them.

Ingredients
  • 1 cup butter, softened 2 sticks
  • 1 1/4 cups granulated sugar
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/4 teaspoon vanilla extract
  • 1/4 cup granulated sugar for rolling cookies
Directions

  1. Preheat oven to 350ยบ F. Grease pan with light spray of olive oil.
  2. Cream together butter and granulated sugar, make sure to whisk the butter and sugar together until it is light and fluffy, the trick is to get it airy.
  3. Mix in the egg
  4. Stir in flour, baking powder, salt, and vanilla.
  5. Scoop cookie dough by the tablespoon full and roll into a ball.
  6. Add the extra sugar to a bowl or plate.
  7. Place each ball of cookie dough into the bowl of granulated sugar and roll to coat well.
  8. Place cookie dough onto baking sheet, spacing about 1 1/2-inches to 2 inches apart. Lightly press each cookie down.
  9. Bake for 10 to 12 minutes or until lightly browned on the bottom.
Makes approx. 30 cookies
