Spiced Pork Tenderloin
Tender and juicy, full of wonderful flavors with hints of lime and cumin. Latin American inspired spices blended in harmony with Italian flavors.
The Main Ingredients
- 1 lb trimmed pork tenderloin
- 2 tbsp ground cumin
- 1 tbsp chopped garlic
- 1 tbsp ground smoked paprika
- 1/2 tbsp Goya Seasoning (with saffron)
- 1 tsp Mrs. Dash Tomato Basil seasoning
- 1 fresh lime
- 6 large basil leaves
How it is Made
- Preheat oven to 350.
- In small bowl combine cumin, garlic, paprika, Goya, Mrs. Dash for tenderloin rub.
- Lay out foil long enough to fold up by 3 inches on both ends, place tenderloin in center.
- Add tenderloin rub, squeeze lime over and cover with basil leaves.
- Fold short ends of foil over and then fold long ends of foil to make a roll.
- Bake on slim pan in oven for about 45 minutes or until tenderloin reaches 162 degrees.
- Remove from oven, let rest for 5 minutes before removing foil and serving.
Makes approximately 5 (3oz) servings.
